ANALISIS KUANTITATIF KAPANG DAN KAMIR DI DALAM MENTEGA IMPOR DARI PERANCIS DAN SELANDIA BARU

(Quantitative Analysis of Mold and Yeast in Butter from France and New Zealand)

ABSTRAK

Pangan merupakan salah satu kebutuhan dasar manusia yang sangat penting. Penelitian bertujuan untuk mengetahui jumlah kapang dan kamir di dalam mentega impor dari Perancis dan Selandia Baru dan membandingkan kualitas mikrobiologik masing-masing mentega. Total sampel mentega impor yaitu 65 sampel, berasal dari Perancis (44 sampel) dan Selandia Baru (21 sampel) yang diperiksa jumlah kapang kamir. Hasil menunjukkan rata-rata jumlah kapang kamir dari mentega asal Perancis dan Selandia Baru adalah 4.89±4.97 (log10). Tujuh sampel mentega impor asal Selandia Baru tidak memenuhi Standar Australia-Selandia Baru yaitu lebih tinggi (33.3%) dari standar. Jumlah kapang kamir yang tinggi disebabkan oleh jumlah kadar air yang tinggi yaitu lebih dari 14-15%. Rata-rata persentase kadar air mentega asal Perancis dan Selandia Baru 17.4±2.8%. Berdasarkan hasil yang diperoleh maka harus dilakukan pemeriksaan keamanan dan kualitas dari mentega impor dan produk asal hewan lainnya.

ABSTRACT

Food is very important as one of the basic human need. The study was aimed to observe the mold and yeast counts in butter which had been imported from France and New Zealand and to compare the results with the standard. The total of 65 butter samples imported from France (44 samples) and New Zealand (21 samples) were examined for mold and yeast counts. The result showed that the mean count of mold and yeast of butter imported from France and New Zealand were 4.89±4.97 (log10). Seven samples of butter imported from New Zealand were not accordance with the Australian-New Zealand standard and seven samples (33.3%) showed higher than standard. The number of high mold and yeast caused by water content more than 14-15%. Average percentage of water content butter France and New Zealand 17.4 ± 2.8%. Based on the result, there should be examination on safety and quality of imported butter and other animal product.
